Home Sweet Home?

Today has been a long one. We are looking to move to a new home within the next few weeks. I forgot how exhausting house hunting can be. I do not enjoy moving at all. Nor can I think of anyone in my life who does. It is so ridiculous how people try to scam you into paying for sub-par dwellings or how they just flat out try to rip you off for your hard-earned money.

It’s crazy how hard it is to find a place to call home. One that is safe, reasonably priced, has fairly decent neighbors, and comes with a landlord you can trust. I guess it’s kinda like Forrest Gump’s box of chocolates…

The search must go on. I’m sure we will be where we are supposed to, when we are supposed to be. Can’t rush what’s already done. Just have to be patient and wait for it to be revealed.

I am looking forward to starting fresh. The upside of moving is the clean slate appeal of a new house. New decor, new arrangements for old furniture, new memories.

Spring is coming soon. The natural signal of new beginnings. I guess it’s time to do some Spring cleaning. It’s hard to believe that we are nearing the end of the first quarter of this year. I must. stop. wasting. time.

This morning I had a Red White & Blue bowl. Not a patriotic reference, but an actual color scheme for my breakfast. I am finding that I love Quinoa. It is very filling and tastes awesome. It’s a nice change from that regular old bowl of oatmeal. If you still haven’t tried it, what are you waiting for?

Red White & Blue Bowl

You will need:

1/2 c Red Quinoa

1/2 c White Quinoa

1.5 c Water

1 c Frozen Blueberries (or thawed)

1/2 c Raw Almonds

2 tsp Raw Honey (divided)

1/8 tsp Himalayan Pink Salt

1/2 tsp Brown Sugar (optional- if you want a little hint of sweet)

Serves 2

Combine Quinoa, Water, Salt and Brown Sugar in Saucepan. Bring to a boil. Turn heat to Lo and simmer for 15 minutes or until water is absorbed. Top with Blueberries, Almonds and Honey.

Note: Frozen Blueberries thaw quickly when stirred into the Quinoa. The Quinoa can stay HOT for up to 20 minutes when left undisturbed. Be careful.
