The Happy Dance

I am mom to 3 young women, ages 17, 19, and 21. Only 2 of them are still living at home. Ever since my daughters were little, I always dreamed of having a cool relationship with them. Not a buddy-buddy type of relationship, but one balanced with the right amount of friend and mom rolled into one. The type of relationship where I am respected for who I am to them and also one that allows us to have fun and laugh together and just be. Today was one of those days, we laughed and just enjoyed the day. I realize that one day soon, I may look around and my nest will be completely empty. One day far too soon.. In the meantime, whenever I am able to spend a day with my girls and make new memories, all is right in my world. One of the memorable moments today was the creation of this beauty: The Happy Dance

Most days I have lunch alone, due to the fact that my girls are usually at work and school. A nice Sunday afternoon lunch together is a welcomed treat.

For years, my children have been my guinea pigs, when it comes to testing new dishes. When they were younger, I don’t know that they could fully appreciate the complexities of some of the meals. Nowadays, they eagerly await the next creation. Today was no exception. I’ve been on a big smoothie and salad kick lately. I love the colors of the fresh fruit and veggies. I also love that something this pretty is so good for our bodies. After my 19 year old tasted the first bite, she remarked, “This makes me want to do a happy dance.” I concur.

This recipe is one of those that is based on your appetite. It can be served as a small side salad or as an actual meal. Add or take away any ingredient to fit your individual tastes. The quantities are based on 1 serving. Double or Triple, etc, as needed.

THE HAPPY DANCE

Thinly Sliced Cucumber (I used 7)

1 c Fresh Kale

1 Small Orange (peeled and sectioned)

7 Strawberries (sliced)

1/4 c Radishes (julienned or chopped)

1 TBSP Slivered Almonds

2 TBSP Litehouse Fuji Apple Vinaigrette

1/4 Shredded Coconut

Salt and Pepper to Taste

Ingredients may be arranged any way you like.
